Omellette Pizza – Snack recipe for Kids

 

My daughter is not very fond of eggs, so I have to device different ways to make them look appetizing. She has gone through different phases of disliking and liking eggs. There was a time when she would spit out egg in any form, then started tolerating omelet and then hating it. If boiled, she only eats egg whites and leaves yolk. But I would like her to have it atleast sometimes a week since it is so rich in protein.

 

She loves pizza, so I came up with an Omellette Pizza or Omizza for her snack in the evening. This is not much different from a frittata but the look must resemble a pizza. It is filling and healthy and very versatile, you can add your child’s favorite toppings to it.

Ingredients

2 eggs

Sliced tomatoes

Onion rings or slices as per your child’s preference

Sliced mushrooms

1 tbsp  Chopped peppers

Oregano or pizza seasoning to taste

Salt and pepper to taste

1 cube proceed cheese (use as much as you prefer)

1 tbsp milk

1 tsp olive oil + ½ tsp butter

1 tsp chopped parsley leaves (optional)

Recipe

In a bowl, break two eggs and beat lightly.

Add milk, salt and pepper to taste and beat well till uniform and foamy.

Heat a small non-stick frying pan.

Heat oil and butter and grease the whole pan well.

Pour the egg mixture and spread uniformly. Turn heat to simmer.

Now start assembling the veggies. Place slices of mushrooms, tomatoes and onions.

Sprinkle chopped peppers.

Lightly sprinkle the seasoning.

Finally grate cheese over the top and cover with a lid.

Cook for 2-3 minutes on simmer till eggs are firm and cheese melts. Alternatively, you can also put it in an oven for 5 minutes so that cheese melts, but covering with a lid works too.

Carefully slide on to a plate and let your child enjoy.
