My 4 years old is one of those children who are not very fond of milk. That means I have to keep finding new evening snacks for her. We are also trying to include different kinds of grains in our regular diet other than wheat and rice like ragi, oats, amaranths seeds and corn. And my daughter loves corn, so these days corn, it is.

Nutritionally, corn is rich in carbohydrates, contains moderate amounts of protein and has low fat content. Adding a little butter can provide enough fat for growing children while skipping it makes it ideal for adults.
According to Dietdetective.com , “Corn is also a good source of vitamin C (more than 10 percent of recommended daily values). Additionally, it has thiamin (14.8 percent of recommended daily values), which helps to produce energy for the heart, muscles and nervous system; riboflavin; niacin (8.3 percent of recommended daily values), which helps with normal functioning of the nerves, skin and digestive system; pantothenic acid (9 percent of recommended daily values), which helps the body convert food to energy; magnesium (8 percent of DV); and phosphorus (11 percent of DV)”.

 

These days we have been experimenting with sweetcorn. When it is available fresh use fresh corn, otherwise frozen works great too.

 

Simple sweet corn chaat/ salad

This is my daughter’s favorite. So easy to make, it is ready in 5-10 minutes and makes a filling snack.

Basic corn salad/ chaat

 

Ingredients

1 cup Sweet corn kernels

1 tsp butter

Salt and  pepper to taste

½ tsp lemon juice

Chaat masala (optional) to taste

Recipe

Boil the sweetcorn kernels in enough water for about 10 minutes.
Strain the water and keep the corn in a big bowl.

Now add butter, salt, pepper and lemon juice. Add chaat masala too if adding.

Mix everything well with a spoon.

Simple corn chaat/ salad is ready.

 

 

 

Cheesy corn and peas chaat

This is a simple variation of the basic corn chaat with peas and kid’s favorite cheese.

Ingredients

3/4 cup Sweet corn kernels

¼ cup green peas

1 tsp butter

½ tsp lemon juice

Italian herbs seasoning to taste

Chilli flakes (optional)

1 tbsp grated mozzarella cheese(or any other cheese)

Salt and  pepper to taste

Recipe

Boil the corn and peas in enough water for 5-10 minutes.

Strain the water and keep the corn in a big bowl.

Now add butter, salt, pepper and lemon juice.

Add herbs and chilli flakes if using.

Top with grated cheese.

Mix everything well with a spoon so that butter and cheese melts by the heat of corn.

Yummy cheesy corn and peas bhel/ chaat/ salad is ready.

 

 

Corn, Paneerand Tomatoes Chaat

This one is for little more adventurous eaters. You may also add more vegetables or tastes like carrots or peppers. My little girl loves corn, she loves tomatoes and she loves paneer so this combination was a no brainer for me.

Corn, paneer  and tomatoes chaat

 

Ingredients

1 cup Sweet corn kernels

1 large sized tomato

100 grams fresh paneer

1 tbsp chopped coriander

1 tsp olive oil for dressing

1 tsp apple cider vinegar/ lemon juice if apple cider vinegar is not available

Salt and pepper / chilli flakes to taste

½ tsp sugar

Garlic powder to taste

Olive oil for sautéing paneer

Recipe

Boil corn kernels in water for 5-10  minutes and keep aside.

Deseed the tomato and chop into bite-size pieces.

Cut paneer into small pieces (0.5 to 1 cm).

Heat olive oil in a frying pan and sauté the paneer cubes lightly as you and your child likes.

Take out the paneer in a bowl.

Now add boiled corn and chopped tomatoes into the bowl.

Add chopped coriander.

In a separate bowl, add olive oil, apple cider vinegar, sugar,  salt ,pepper or chilli flakes and garlic powder.

Mix well with a small beater or fork.

Add this dressing to the corn, tomatoes and paneer mixture and toss well to mix.

Enjoy the yummy and healthy salad.

For adults, you may top these chaats with green/red chutneys, sev dal etc.
